I just built a computer from scratch and the Gigabyte Mobo has a single
ps2 style port for either a keyboard or a mouse.

Not so ... there are dozens of newly introduced motherboards from
many of the top of the line board houses with PS/2 ports for keyboard
and/or mouse.
Perhaps the system builders (like HP, Dell, Lenovo, Toshiba, Sony,
etc.) are using boards that do not support PS/2 but they certainly
have not disappeared.
