The problem with the 300 series stainless steels is that they cannot be heat
treated. Using the McMaster-Carr website, compare 316 7x19 with galvanized
steel. For a given diameter, it's about half the strength.

316 stainless is a good choice for corrosive environments. Some sailboat
makers use it for rigging and good boatyards may stock it and certainly will
have swaging equipment and fittings if you can get the cables premade.
Otherwise, Nicropress fittings are a good choice and you can probably rent the
tools.
