I see 5K ohms across the NGK TR55 used in my 500HP Trans Am. Of course it
is not a "racing" plug per se even though I use it to race.

Better be sure they are racing plugs.
The days of grabbing plugs with internal series gaps in the ceramic and
without internal resistors are long gone. Ohm from the center electrode to
the top cap and you'll see what I mean.
