[Amps] overvoltage

How do I overvoltage protect a MOSFET?  I tried those gas discharge 
arrestors, but they don't cut off fast enough after they ignite.  MOVs 
are too slow, and avalanche diodes can't take much dissipation.  I'm 
using the MOSFETs to switch AC signals, and inductive loads make voltage 
spikes, so occasionally it fries a MOSFET.
