How do they do it?
Carefully. With a combination of very fast VFO/PLL switching, PIN diodes AND
reed relays.

It is a SPST power reed relay in most rigs, used only to disconnect
the final so it doesn't sit across the RX.
>Do they use the same system in all their rigs?
Yes, but with some variations depending on IF, PLL use, etc.
