I was hoping that there might be a solution that would not require a file
edit after exporting the ADIF from WriteLog. But as you described it is
possible to change the mode using an ADIF editor. If no WriteLog solution is
available I can certainly continue to do edits.

I just went through this and fortunately my PSK31 contacts logged in
WriteLog were showing as SSB so they were easier to find in the
log. Make a list of the contacts which are PSK31 so you can find them in the
ADIF.
In the ADIF file, change MODE:4>RTTY to read MODE:5>PSK31

I am using the MMTTY module within WriteLog for RTTY and occasional PSK31.
QSOs made in PSK31 show up in the ADIF output file as RTTY. Is there a way
to have WriteLog record it correctly?
