Leave the galvination in place.
I don't think you have to mess with paste or paint of any sort.
I would protect the connection from weather.

The pressure of the clamp through the thin shim will cause high pressure
spot-wise. That will penetrate the paint layer and cause the electric contact.

I have an aluminum tower myself and aluminum wires for the ground connection
which reduce the corrosion possibility.

What’s the best way to connect the copper wire/strap to the 55G tower leg?
I’m planning to clean the galvanized leg, wrap the leg with a layer of 0.005”
SS shim stock and then use a couple of SS hose clamps to hold the wire against the tower leg.
Is that the right way to do the attachment?
Should I use any copper paste as well?
