Your proposal to add three tails to the 40/80 dipole is certainly
plausible. However, because the tails may interact, you may have to play
with the lengths to get what you want. Spraying the tails so that the
ends are as far apart as is feasible in your installation will minimize
trimming problems.
Although I do not have the antenna here, it appears that the coil is
actually an LC trap, with the capacitance being a function of the
inter-turn stray capacitance in the coil. Hence, the coil is not just a
loading coil on 80, but has a reactance that is a function of the
inductance and capacitance at 80 meters relative to its resonant values at
40 meters or just below.
