You're probably going to get widely varying opinions/advice. Handling
serial ports on a Win 7 computer is easy using USB serial adapters (FTDI)
which work very well. Parallel ports are a different story and I think you
need to jettison your parallel devices moving forward and spring for a new
usb printer.
As far as software compatibility, I recommend that you go through a
transition period of keeping your old XP computer running along side your
new Win 7 computer. Win 7 does have an XP mode to allow legacy software to
run but I'm not sure how well that works. On the other hand, any software
that you're using that isn't Win 7 compatible is O-L-D and maybe it's time
to replace it and go through the painful process of installing and learning
new software. I hear this helps keep the brain young.
