I was wondering if any of you out there have any experience running a VPN through the CPE+ NAT. Our Network is not Routing or Bridging (Except for the NATs) so the whole Wireless network is internal

I don't think that this will work for you. Windows VPN (PPtP) requires GRE (IP Protocol 47) to be forwarded to the host behind the firewall. Since there is no facility to forward specific protocols (
