The only way I know how to do it requires dis-assembly of the encoder,
which is essentially not intended for such dis-assembly. The front is
held to the back with splayed tabs and its necessary to compress them
such that the two halves can be separated. Of course there are innards
that will disappear if you let them so a careful approach and steady
hand are useful.
I don't think you can do this with the encoders mounted and if you tried
I would think you risk greater damage.

If you do not do that, some adjustments will double step.
It takes about 5 minutes each to do this.

Though not ideal the encoders can be disassembled if your vision
and tool kit are up to it. This allows removal of the detent
function followed by reassembly of the encoder. It can be done
though there are failure opportunities along the way.
Secondly watch out for the shaft length. I forget exactly but I
think only the versions with the longest shaft length (25mm?) can
be used.
The lower resolution 15ppr is I think the same as the original and
better than the higher resolution 20ppr with which you will need to
crank the knob much more for the same effect.
Knob removal is by pulling off the silver collar and then undoing
the hex set screw. Board removal requires undoing all 6 of the
plastic collars.
